Raw, raw, raw!!  That’s us at the Optimum Health Institute (OHI), cheering you on and helping you make healthy changes to your food plan!

Cooking, or “Putting fire to food,” as Christ said in the Essene Gospels, can kill up to 40% of the minerals, seriously compromising the nutritional value of the vegetables or fruits. Recent studies show how cooking can chemically change foods from sources of essential nutrition to acid-forming toxins, free-radicals and poisons that can derail our immune system.

Raw foods are packed with essential nutrients for optimal health, and the first three weeks of our holistic program focus on feeding you cleansing, life-extending meals of live, raw organic vegan recipes. 

In Phase 1, all the foods our kitchen cheerfully prepares for you are specially selected to create a natural detox and cleansing for the body.  Besides raw whole organic fruits and vegetables, we pile your plates high with “live” foods – sprouted seeds, nuts and grains that continue to grow until the minute you start to chew them.  The fermented foods we serve are already partially digested through the fermentation process, and all Phase 1 foods are a valuable source of alkalinity for your body.

In fact – think of your body as a battery.  With insufficient acid, a battery can no longer produce energy.  In the case of your body, eating acidic foods, like sugar and processed items, actually drains your body’s energy reserves.  Only by eating alkaline foods that help your body release toxins can that balance be restored and good health achieved.

Most chronic challenges to health can’t even exist in a highly alkaline environment. For major health opportunities, it may be necessary to stick with the Phase 1 detoxifying food plan beyond the initial three weeks, and up to several months.

Phase 1 foods, to be eaten in correct combination, are: fresh wheat grass juice, rejuvelac, all fresh fruits and vegetables, buckwheat and sunflower greens, sauerkraut, seed sauces, sprouted grains, sprouted seeds, Essene crackers, vegetable crackers, fresh vegetable juices, gazpacho, fruit soup, raw vegetable soups, dehydrated vegetable or seed loaves (one a week), either broccoli delight or coleslaw (once a week) and avocado in moderation.

When you’ve created a healthy alkaline balance in your body, you’re in a state of optimal health and feel your energy is surging, you can shift to Phase 2, the Maintenance plan, and add some additional foods to your meals.  These Transitional foods should only be eaten in moderation because they may slow down the detoxification process you started in Phase 1. In fact, stick to eating 85-90% of Phase 1 foods daily.

Phase 2 foods, to be eaten in moderation, are: almond milk, seed milk, quinoa, millet, oatmeal, brown rice, cooked beans (sprout them first), baked sweet potato, baked yam, vegetable soup, lightly steamed vegetables, organic corn tortilla, soaked or ground nuts, dried fruit (soaked), nut cheese spread, Farmer’s chop suey, nut butters, mock salmon loaf.

It’s best to just add in one food at a time, and observe over several days to see how your body reacts.  Any sign that your body can’t process the food – like indigestion, gas or bloating, -- means you should permanently eliminate it from your diet.

And finally, here are the foods to avoid: red meat, poultry, fish or seafood, milk, cheese, eggs, coffee, tea, soft drinks, tobacco, alcohol, oils, fried foods, breads, cakes, cookies, sugars, honey, molasses, artificial sweeteners, salt, processed soy foods (tofu, tempeh, soy milk).

Bad Habits

There’s a funny thing about bad habits – you might not even be aware of the fact that you’re doing them until they’ve already become “encoded” into your daily routine.  Mindless eating, smoking, procrastinating, squandering hours in front of the television – pick your poison!  Whatever the nonproductive or harmful habitual behavior you’ve fallen into, as Einstein so simply yet eloquently stated, you’re going to have to do some serious mindful shifting to climb back out of that rut.

Lucky for you, the Optimum Health Institute (OHI) has at its very core the powerful resources you’ll need to substitute positive new behaviors for undesirable old ones. The Five P’s to Optimum Health are ideal for breaking old habits.

  1. Purpose to achieve a natural balance and reconnection to the Divine.

    There’s an entirely new branch of psychology, and it’s called, “Positive Psychology.”  Developed by Dr. Marty Seligman at the University of Pennsylvania, Positive Psychology has discovered we require three key things to be truly happy in our life – faith, friends, and a sense of purpose, or living a meaningful life. When we’re being of service in some way, whether on a global level or in our own family circle, we can feel that healing and empowering sense of purpose.

    Particularly when an embedded habit is hampering your efforts to function on all cylinders, it is interfering with your ability to have as purposeful a life as possible. Realizing that shifting this behavior will bring you more into natural balance, and facilitate a stronger connection to your faith, are powerful motivators for kicking old habits and embracing new happiness and freedom.

  2. Positive mental attitude that supports the healing process. 

    If you’re convinced you’re going to fail at kicking a bad habit, guess what?  You probably will.  Instead, a mental shift is in order. Don’t dwell on the past – reliving old hurts and failures can prevent healing in body, mind and spirit. And don’t waste time worrying about what might happen down the road.

    Staying in the present moment and releasing your fear about the future increases your joy level, enhances your immune system and gives you the power of creation this very moment.  Be present, be thankful, and watch how quickly you can shift into a positive mental attitude that gives you the strength to stick to your goal!

  3. Persistence in following the holistic disciplines of the OHI program. 

    The daily routine at OHI gives you such powerful resources to shift out of harmful old routines and embrace a healthy new lifestyle, free of embedded habits that derailed your good intentions.  Prayer for the strength to release destructive habits; contemplation about how the changes will make you a happier, healthier, more whole person; journaling to explore your deepest inner thoughts about why this habit attracted you in the first place, and the things you will replace it with; community with friends and guests to support you on this healing journey; quieting the mind to be able to make mindful, deliberate decisions; conscious breathing to energize the body, mind and spirit so healing can happen, celebrating each time you refrain from indulging in that habit you’re releasing. 

    All of these holistic disciplines, and any of the others taught at OHI, when persistently followed, give you new strength to establish healthy new priorities in your life.

  4. Patience with your body and yourself, as you allow your body-mind-spirit to heal. 

    You didn’t develop these habits overnight.  You’re most likely not going to shed them overnight, either. Psychologists say it takes 21 days to establish a new habit, and at least that long to break an old one. During those weeks of change and healing, gently nurture your connection to God by focusing on feelings of gratitude, forgiveness and joy.

    Impatience with yourself, and similar negative thinking, literally makes you sick by stimulating the production of toxic chemicals in your body. Dr. Candace Pert talks about the science of positive thinking in her brilliant work, “Molecules of Emotion,” which we carry in our OHI Store. When you do have a negative thought, before it can start triggering the production of toxins in your body, think, “Cancel!” Immediately remind yourself, “God loves me, and is patient

ly supporting me as I release these bad habits” and take just 10 seconds to breathe in God’s unconditional love and grace.  You’ll not only neutralize any negativity and grant yourself patience – you’ll actually be setting healing in motion.
  • Prayer to a higher source who will share the load with you.  As with all things, asking for God’s help in achieving your heart’s desire is the most powerful tool you can use.  Particularly when you’re making major changes in your life, like healing old bad habits, instead of setting aside a time or two each day to pray, shift your attitude about your connection with God.  See yourself on “speed dial,” with a constant open line to the Creator.  Make each moment, each breath, a sincere prayer for strength, wisdom, courage, guidance and grace.  With God, all things are possible – particularly when all lines of communication with Him are wide open.

    OHI Wheatgrass juicing

    As every guest to the Optimum Health Institute (OHI) learns, daily cleansing enemas are an essential part of the body’s detoxification process. If someone is eating a diet high in animal products and processed foods and low in fiber, it is common for fecal matter to become impacted in the twists, turns and pockets of the colon. Frequently it can only be dislodged through colon irrigation, or cleansing. 

    It is estimated that many adult Americans have between 10 and 20 pounds of impacted stools inside their bowels. When the fecal matter remains in the large intestines and colon instead of being promptly expelled, the body continues to absorb toxins, which can eventually result in serious and even deadly health challenges. 

    This is not a new issue.  Thousands of years ago, people were taught how to purify the body with a live, raw vegan diet and enemas.  The Essene Gospels, which pre-date the Bible, instruct followers to fill gourds with river water blessed and warmed by the angels of the sun, and direct it to their “hinder parts” via the gourds’ long, hollow vines.  The ancient Essene sect of Judaism understood that fasting and colon cleansing helped clear negativity and toxins out of the physical body, so the mind could be quieted and the spirit renewed.

    Today, we understand that flushing toxins out of the body with colonic enemas can also remove electrolytes and the healthy flora necessary for balance in the colon. That’s why immediately after doing an enema or receiving a colon hydrotherapy treatment, OHI teaches it’s essential to implant about three and a half ounces of fresh wheatgrass juice into the colon.  Holding the wheatgrass juice in the colon for 20 minutes, or as long as possible, helps restore that healthy balance necessary for proper digestion, absorption and elimination.

    The juice will increase colon absorption, replenish the body’s electrolytes and minerals lost during the enema, and quickly travel to the liver and heart via the hemorrhoidal vein. By bypassing the stomach, the wheatgrass juice can be immediately absorbed into the body, restoring optimum balance. As the colon becomes more and more clear through E’s and I’s (enemas and implants), the entire 3-ounce wheatgrass juice implant could end up being completely absorbed by the colon. This is a good thing!

    The little green guy with the big ears is right – in all honesty, there is no “trying” to accomplish something. Either we do it, or we don’t. We truly are the “masters of our domain.” That gray area where we can feel like we’re not calling the shots in our lives is triggered not necessarily by what we’re consciously thinking, but what words we’re actually using.

    In the magnificent creation that is our mind, we’re simultaneously functioning on a variety of levels.  When we carelessly say something that diminishes us in some way, even if we’re just joking, our subconscious mind picks up that energy and it becomes our reality.

    For instance, someone might say, “You’re really good at yoga,” and you instinctively reply, “Oh, no!  I’m not good! I’m a real klutz!”  What you’ve just done is disrespect your effort, and you’ve also given your mind the message that you never will be able to execute a respectable Downward Dog or Salutation to the Sun.  And guess what? By imprinting that negative message on your brain, you make it your reality.

    The “You Validation” class we teach at the Optimum Health Institute (OHI) during your first week  is a beautiful example of the power of recalibrating our words to train our mental and spiritual selves to cooperatively exist hand in hand.

    During the profound class experience, one by one, each person must listen to all the other people in the circle saying something nice about them – anything from “You are so friendly every time I see you” to “It’s inspiring to hear you share your story.”  Instead of being able to brush off the compliments or shoot them down with a self-deprecating remark, the person in the spotlight can only say, “Thank you!” 

    It’s overwhelming, sometimes embarrassing, challenging and ultimately so very healing to be able to hear nice things about yourself, and to accept them as reality. Through the You Validation class, people have permanently changed their perspective about themselves, and started to win at the word game.

    Another way to win the word game is realizing how many times a day you diminish yourself by carelessly choosing words that can keep you feeling stuck, or powerless.  One of our favorites at OHI – we don’t say it’s an “illness,” we say it’s a “health opportunity.”

    When you say you “might” do something, you’re embracing a very passive attitude that certainly doesn’t inspire any active effort to accomplish it.  Instead, switch “I might” to “I will,” and just see how quickly that simple change can click you into gear.

    Here’s a list of common disempowering words and phrases, and the empowering substitutions that will make a world of difference.  Try it and see!  You have our word on it.

    Imagine plucking a luscious bright red organic strawberry right off the vine, and popping it into your mouth.  That juicy sweetness explodes on your tongue as you bite down, and you can almost feel the vitality of the just-picked fruit lighting up every cell of your body.

    Now imagine taking a strawberry from a plastic wrapped carton – a strawberry that’s been trucked in from several states away, and has been languishing on a store shelf for days. Where’s that same life force and vitality?  Unfortunately, the longer the amount of time between when produce is harvested, and you eat it, the more nutrients that are lost. 

    “Buy Local” bumper stickers are sprouting up on cars across the nation, and for good reason. When you buy produce from organic farms and co-ops in your area, you’re not only supporting the local economy – you’re getting your fruits and vegetables at the peak of their most nutrient-dense freshness.  You’re also staying in touch with the natural rhythms of the Earth by eating produce that’s in season. 

    Another reason to stick with in-season local vegetables and fruits – you’re keeping the air cleaner since the produce didn’t arrive at your store after a long haul via a network of trucks.

    Apricots, apriums, blackberries, blueberries, boysenberries, cactus pears, cherimoyas, cherries, grapefruit, guavas, kumquats, lemons, limes, loquats, mandarins, nectarines, oranges, peaches, plums, pluots, raspberries, strawberries, tayberries.

    For leafy green vegetables, avoid bunches with yellowed leaves, or discard any yellowed tips before eating. Bacteria can get into the plant through the plant's pores and turn the tissue yellow. Check fruit for bruises, which indicates it may spoil more quickly.

    Check back often for updates on finding, preparing and eating organic foods.
