The Grassroots Momentum at OHI

Since Bob Sr. and Pam Nees, along with Raychel Solomon, created the Optimum Health Institute (OHI) 40 years ago, it’s grown through a grassroots effort – wheatgrass roots, that is . One of the key components of the OHI holistic healing program has always been detoxifying the body, and the founders knew drinking at least two ounces of wheatgrass juice twice daily would help guests clean their system quickly.

Besides its known detoxifying abilities, wheatgrass juice has been recognized as one of the most nutritionally complete and important foods we can consume. It delivers nine of the 11 essential amino acids that the body cannot produce. The chlorophyll in wheatgrass juice has over 100 elements required by the human body, along with vitamins A, E and B, with a healthy dose of Calcium, Phosphorus, Sodium, Potassium, Magnesium, Iron and Zinc.

Dan Strobhar, OHI San Diego Garden Manager and Senior Facilitator, has been an active member of the OHI community since 1987. He’s in charge of what has been dubbed “The Wheatgrass Cathedral” – the building where Dan oversees the planting and cultivation of all the wheatgrass and sunflower, buckwheat and pea sprouts guests consume.

“We go through roughly 65 trays of wheatgrass every day,” Dan said. “It takes about eight days from planting the seeds to being able to harvest the grass.” Dan estimates OHI guests drink about 15 gallons of wheatgrass juice a day and 54,000 gallons each year. That means since opening day, OHI has grown nearly 876,000 trays of wheatgrass, yielding roughly 2 million gallons of wheatgrass juice – enough to fill about three and a half Olympic-size swimming pools.

The guest who still holds the record for the greatest amount of wheatgrass juice consumed in a day, said Dan, was an actor who used to play an alien on the original Star Trek television series in the sixties. The guest, who stood a towering 6’11,” daily drank 48 ounces. He joked he was trying to turn himself green.

In addition to the healing properties of drinking wheatgrass juice, the healing plant is used as a soothing poultice. After the juice has been expressed, guests will frequently take the blades of grass and apply them directly to the skin.

One of the reasons guests experience consistently positive results with the wheatgrass, Dan said, is because from day one, OHI invested in the highest quality organic seeds from a Nebraska family farm. “You can get cheaper organic wheatgrass seeds,” Dan said, “but OHI prefers to supply guests with the best available. We’ve used the same supplier from the beginning.”
